Collywood Cucina - Thai Portobello Wraps

Thursday night is vegan night in the Collywood Cucina. Dad and Daughter wrangle over a recipe and attempt to prepare it without burning down the house. No animals are injured or included in the making of these meals. However, a small family of mushrooms was massacred this evening. Tonight's recipe courtesy of Forks Over Knives Cookbook.

The daughter is a mushroom thief!


First, massacre about half a kilo of mushrooms and fry them up with a few chopped shallots. Then spice them up: skin the zest of an unsuspecting lime and squeeze his juice into a bowl, add a spoon of crushed chilli, a clove of garlic, a thumb of ginger, 3 tablespoons of soy sauce.


Add coriander, mint, and green onions. You can find nice green onions at Mr Beans in Rimini. Sainsburys is useless.


Spoon massacred Thai mushrooms into romaine lettuce leaves - not Romanian lettuce leaves daughter!


Lace with sweet chilli sauce before eating!
